This is NOT buttermilk. Id call it acid milk. To make actual buttermilk, youd need some "mother" just like sourdough bread starter. Buy buttermilk frim the store. Right before it runs out, refill it with while milk and leave it at riom temperature to ferment. Please do not make vinegar milk, it is not the same thing at all. You will ruin your food.

This recipe, in fact, almost none of the recipes I saw mention that this WILL NOT WORK if your milk is cold! Let your milk sit out or microwave it until it's room temperature. One cup was perfect for me after 30 seconds in the microwave. It felt hot on top, but once I stirred it, the temperature was just right. I added vinegar and immediately saw it start to curdle! Hope this helps someone!

I'm very disappointed with this recipe. I added lots of extra spices in the batter (2 t ground cinnamon, 1/2 t freshly grated nutmeg and 1 1/2 t allspice), but the pumpkin bread is pretty flavorless. As a matter of fact, there was no baking aroma, as would be usual (pumpkin, cinnamon, allspice, etc.). The texture is nice and it seems to be baked, properly. But, again, there's just no taste, other than sweetness. I dislike wasting food, so I'll wrap the loaves and leave them overnight. If the flavors develop, I'll update this comment, but I've baked for many years and I don't anticipate much improvement... Update: the loaves are still pretty tasteless (a day later), unfortunately. I just bought new spices a month or so, ago, so that's not the problem. Also, the baking time was about 55 minutes in total - longer than stated in the instructions. As I said in my earlier comment, I'm disappointed, to say the least and don't recommend this recipe...

I personally have found that lemon juice works better than vinegar, and faster.
